The blocks don't burn away because they aren't listed among the burnable blocks in the BlockFire
class, so fire itself isn't sustained by them, and also doesn't affect them.

Can confirm this. Maybe this is because a door is a 2 block structure, however, that shouldn't matter

That's about burning in a furnace, this is about blocks being burned by fire blocks.

Note that signs are commonly used in lava grinders of mob farms to contain the lava. If the signs would burn away, the grinders would break. Using other blocks like open fence gates is not an option either, because they are made of wood too. So either signs being immune to fire should be WAI or there needs to be a proper replacement made of fire-proof material (e.g. iron signs, nether brick fence gates, ...).

In some cases you could use sugarcane, (waterlogged or not) (dead or alive) coral (/fans), cobwebs, scaffolding, seagrass or a block that gets extended and retracted by a piston. But I agree, adding nether brick fence gates would be a good idea when this bug gets fixed.

I think that it makes sense for block entities, especially chests and barrels, to not burn. That would be overly cruel.

The grindstone and the smoker consist of mostly stone, so these blocks really shouldn’t burn away. If a smoker should burn away though, it should became a normal furnace.

If rails should burn away, they could become tieless.

I may be incorrect, I think they are burning just the visual for burning is not happening.

RE: Les3awe, then it should not catch fire from lava, as that's just confusing. Either a block should not catch fire and not burn, or catch fire and burn.
I suggest listing chiseled bookshelves still.

I would think that items which are or are crafted predominantly from wood, wool, coal, charcoal, hay bale or plant-related blocks would burn, but not the smoker, rail, lever, grindstone, daylight detector or nether wood, as those are mainly crafted from non-flammable materials.
