The bug
Single biome worlds might be generating incorrectly. For example, large fake oceans can generate in the middle of a tall birch hill single biome world (MC-237636), and frozen oceans contain large landmasses. This is intended for normal worlds as biomes are now independent from terrain generation, but it is still very weird to see in single biome worlds.
Expected result
Single biome worlds should generate similarly to 1.17.1.

Happens with Jungle and Desert worlds too. Features such as villages and ruined portals often appear floating in the fake oceans too.
This is caused as the game can now create certain factors without making it a biome, like rivers of all kinds will generate in these worlds without the need for a biome. Idk if this is intended but it might just be since it does allow single biomes to have these factors.
This issue is set to RESOLVED, but in 21w42a and 21w43a it is not. E.g. ocean-types of single biome are generating as desert (warmer ocean types) or as cadaveric plains without animals (colder types of ocean) ...
Seems like it's not as actually intended since it's spawning Plains terrain instead of all ocean, just raise the ocean height for this preset or something and it will be better for people who want to play an ocean world with terrain instead of superflat with no terrain and all water
I am adding my own personal experiences with this issue to this thread. You will find an ocean biome with vast fields, rivers, and lakes (seed #: 06252022), a desert biome with a vast ocean (seed #: Thereoncewasashipthatputtosea), and a frozen ocean with an above sea level ocean structure (random seed). It would seem that the sea level is not at the right height and thus results in structures that would normally spawn on the sea bed above sea level.
I was able to reproduce this when generating a dripstone cave biome world.
