Horses are impossible to tame: They don't buck you off and they don't become tamed when you ride them.
Tamed horses (from previous versions or summoned) can't be controlled, they don't move at all
Tamed horses don't look at the same direction as their riders
Pigs cant be controlled either using a carrot on a stick
Minecarts cannot be controlled with WASD. But powered rails, pushing or simple momentum will allow them to move just fine.

i couldn't ride horses that had just grown up, and if i was to relog they would be babies again.

First one I can't reproduce, second is another ticket (MC-61535), next two are legit, last one I can't reproduce, though it seems mobs are a bit slower now.
You don't have to use so many commandblocks with the same command.. A simple command to get multiple "natural" Zombies suffices, takes you just few seconds.
But I can confirm that a naturally spawned ChickenJockey is visible in 15w44b, just tested it.
So it seems that the Pig is the sole remaining problem at the moment.
I've seen invisible chicken jockeys before in previous snapshots, if this still exists in the current snapshot then it should be reported as a separate issue. I can confirm this though, as a few weeks ago I was being chased by "hostile chickens" which were really invisible jockeys.
"Hostile chickens" - This made me lol };] As we all know, Chicken are evil dinosaurs to begin with ^^
Jokes aside - As I commented before, I tested the Chicken Jockeys via command as well as natural spawning, and the baby zombies riding them are not invisible (anymore) in the current snapshot.
Come to think of it, I didn't test it for the Nether/baby pigmen, but they shouldn't be invisible either.
Would be nice if someone's got the time to confirm this though, I can't currently.
Same behavior here. Untamed horses can not be tamed. Tamed horses (and saddled pigs) will not move (when ridden).
